Summer Vegetable Quinoa Bowl

Quinoa has never tasted so sweet! A bowl packed with summer vegetables, mung beans and topped with fresh herbs, this could become one of your new favorite summer dishes.

 

Ingredients:

 

1/2 cup quinoa, cooked

1/2 cup water or vegetable stock

1/2 cup zucchini, diced

1/2 cup tomato, diced

1/2 cup mung beans, cooked

1/2 cup red capsicum, diced

1/2 cup yellow capsicum, diced

3 tbsp balsamic vinegar

2 tbsp olive oil

1 tbsp spicy mustard

2 tbsp fresh dill, chopped

1 tsp freshly minced garlic

Himalayan or sea salt and pepper to taste

 

 

Directions:

 

Combine quinoa*, zucchini, tomatoes, mung beans, and peppers into a bowl.

In a small jar or bowl, whisk olive oil, mustard, dill, garlic, salt and pepper.

Mix thoroughly and pour over the grain bowl.
